INGREDIENTS
• 3 cups Desiccated Coconut
• 400g Condensed Milk
• 1/4 Teaspoon Cardamom powder
• 2-3 Teaspoon Melted Ghee
• 1-2 Drops of Red Food Colour
• 1 Teaspoon Rose Essence
• Few chops of Almonds
INSTRUCTIONS
- Place a large heavy bottomed pan over low heat flame. Add coconut and Condensed Milk. Cook, stirring countinuously for 2-3 minutes or until the mixture gets semisolid consistency. Add cardamom and ghee . Cook again , stirring countinuously, for 2-3 minutes or until the mixture starts to leave the sides of the pan. Remove from the gas
- Divide the mixture into two equal parts , Add 1-2 Drops of Red Food Colour and 1 Teaspoon of Rose Essence and kneed the dough well until you get a Beautiful Dark pink colour. Add some more Cardamom if want to the second part
- Grease some ghee on a Baking pan . Add pink coconut mixture to the bottom of the baking pan .Use spatula to spread the white mixture in a single layer on top, to get a smooth top
- Place the baking pan in the refrigerator for an hour
- Once the Barfi is set , cut the Rose Barfi into desired shapes , Garnish it with few chops of Almonds and serve chilled
