\/>25 cinnamon (dalchini)<br \/>1 clove (laung \/ lavang)<br \/>1 cardamom (elaichi)<br \/>salt to taste<\/p>\n\n\n\n<p>For The Vegetable Gravy<br \/>1 1\/2 cups chopped and boiled mixed vegetables<br \/>2 tbsp oil<br \/>1\/2 tsp cumin seeds (jeera)<br \/>3\/4 cup finely chopped onions<br \/>2 tsp ginger-green chilli paste<br \/>1\/4 tsp turmeric powder (haldi)<br \/>2 tsp coriander (dhania) powder<br \/>1 tsp chilli powder<br \/>1\/2 tsp garam masala<br \/>1 cup roughly chopped tomatoes<br \/>1\/4 cup paneer (cottage cheese) cubes<br \/>salt to taste<br \/>1\/4 cup milk<br \/>a pinch of sugar<\/p>\n\n\n\n<p>Other Ingredients For Vegetable Biryani<br \/>1\/4 cup fresh curd (dahi)<br \/>1\/4 cup finely chopped coriander (dhania)<br \/>a few drops of edible saffron colour<br \/>2 tbsp ghee<\/p>\n\n\n\n<p>For The Garnish<br \/>fried onions<br \/>fried cashew nuts<br \/>Method<\/p>\n\n\n\n<p>For the rice<br \/>1 Combine 4\u00bd cups of water, bayleaf, cinnamon, clove, cardamom, rice and salt in a deep non-stick pan, cover with a lid and cook on a medium flame for 10 to 12 minutes or till the rice is cooked.<\/p>\n\n\n\n<p>2 Strain the rice using a strainer and keep aside.<\/p>\n\n\n\n<p>For the vegetable gravy<\/p>\n\n\n\n<p>1 Heat the oil in a deep non-stick pan and add the cumin seeds.<\/p>\n\n\n\n<p>2 When the seeds crackle, add the onions and saut\u00e9 on a medium flame for 1 to 2 minutes or till the onions turn translucent.<\/p>\n\n\n\n<p>3 Add the ginger-green chilli paste, turmeric powder, coriander powder, chilli powder and garam masala and saut\u00e9 on a medium flame for a few seconds.<\/p>\n\n\n\n<p>4 Add the tomatoes and 2 tbsp of water, mix well and cook on a medium flame for 4 to 5 minutes.<\/p>\n\n\n\n<p>5 Add the mixed vegetables, paneer, salt and milk and cook on a medium flame for another 2 to 3 minutes, while stirring occasionally.<\/p>\n\n\n\n<p>6 Add the sugar, mix well and cook on a medium flame for 1 more minute.<\/p>\n\n\n\n<p>How to proceed to make vegetable biryani<\/p>\n\n\n\n<p>1 Combine the curds, coriander and saffron colour in a bowl and mix well.<br \/>Add the prepared rice mixture and mix well.<\/p>\n\n\n\n<p>2 Transfer \u00bd of the rice mixture in a handi and spread it evenly with the back of a spoon.<\/p>\n\n\n\n<p>3 Add all the prepared vegetable gravy on it and spread it evenly.<\/p>\n\n\n\n<p>4 Top it with the remaining \u00bd of the rice mixture and spread it evenly.<\/p>\n\n\n\n<p>5 Pour the ghee evenly over it and cover it with a lid.<\/p>\n\n\n\n<p>6 Place the handi on a non-stick tava (griddle) and cook on a slow flame for 25 to 30 minutes.<br \/>Serve the vegetable biryani immediately<\/p>\n\n\n\n<p>7 Garnish Veg Biryani with some fried onions and cashew
